Aphelion follows a thoughtful, low-intervention approach to winemaking. The focus is on healthy vineyards, careful farming, hand-harvested fruit, wild yeast fermentations and avoiding unnecessary additions or manipulation in the winery. Rather than chasing a particular style, the aim is to produce wines that honestly reflect the vineyard, the season and the winemaker's intent.
