Pure, deep and beautifully composed Chablis

Duplessis’ village Chablis comes from 1.8 hectares divided across four north-west-facing parcels situated between the Premier Cru vineyards of Vaillons and Montmains. Vine age ranges from 20 to 60 years, with the mature vines helping preserve balance and freshness through warmer growing seasons. The vineyards are certified organic and now farmed biodynamically.

The grapes were pressed directly to tank without pre-fermentation settling or racking, then fermented naturally with indigenous yeasts. Malolactic fermentation and 10 to 12 months of maturation also took place in tank, retaining clarity and an unadorned expression of the vineyards.

Dense and quietly concentrated, the 2022 combines pure fruit with lively acidity, delicate bitterness and a firm mineral backbone. There is generosity from the vintage, yet the wine remains focused, energetic and classically Chablis.

About the Wine

A blend from three parcels located opposite the Premier Cru Vaillons. Floral and mineral, it can be aged for two to five years and pairs well with a variety of dishes: aperitifs, shellfish, and cold buffets. The quintessential wine of the appellation.

The Domaine owns 1.8 hectares across 4 parcels, all situated between the 1er Cru of Vaillons and Montmains. Northwest exposition. 1 plot of 20-year-old vines, 1 plots of 45 years old and finally 2 x parcels 60-year-old vines. Lilian explains that when you have the benefit of old vines, their ‘experience’ helps to negate the warmer weather, they are not so easily influenced by these factors. Pressed straight into tank, no preferment racking or setting, wild fermentation, malo finished in tank. Chablis then see 10 to 12 months elevage total in tank before bottling.

The work in the vineyard, in an appellation like Chablis, and on plots like those of DOMAINE DUPLESSIS, is essential to the production of high-quality wines: throughout the seasons, we are busy between the rows pruning, cleaning, monitoring because that is where the wine is made.

No chemical fertilizers, no synthetic insecticides or fungicides, no products that could damage the soil or the vines and, ultimately, the quality of our wines. Weed control is mechanical; cover cropping helps to naturally combat many pests; sulfur and copper—natural minerals—help fight powdery mildew and downy mildew in very small doses. These constraints, which we have voluntarily imposed on ourselves, require extra attention and monitoring. In our opinion, the health of the soil, the vines, the winemakers, and the consumers depends on it.

About the Winemaker
Domaine Gérard Duplessis is a family run cellar founded in 1895, today managed by Lilian Duplessis. Located in the heart of the Chablis’s region it has 9 ha divided on 8 different appellations. Every vineyard is worked in accordance to organic farming since 2007 and achieved certification in 2013 hence all the wines now from then are labelled as such. In fact he now farms biodynamically.

All vineyards used for Village, Premier Cru, and Grand Cru wines are Kimmeridgian limestone, with the Petit Chablis on Portlandian limestone, making the Village Chablis a seriously good village style. As mentioned above the Domaine is Certified organic, quite the achievement in such a marginal climate as Chablis.

Owning such superb old vineyards is one of the key’s to the quality of wines produced by the Domaine, particularly in the ever warming climate of Chablis.
