Bright, slurpy Nebbiolo for pizza night

Super Juice begins with early-picked Nebbiolo, direct pressed as a pale free-run rosé and used to start the fermentation. Later-picked CVT230 fruit was destemmed, inoculated with the rosé and left to ferment undisturbed before being pressed to stainless steel, exposed to oxygen and racked into seasoned puncheons.

Only the most aromatic and beautifully slinky barrels made the final blend. Bottled without additions or filtration, this is bright, energetic Nebbiolo with a light frame, plenty of perfume and an easygoing 12.5% alcohol. Give it a light chill, order a pizza and let it flow.

About the Wine

100% Nebbiolo, this spunky red comes from Heathcote fruit on rich iron and clay soils. The various clones were harvested separately and coddled in the winery. Block A was harvested early to maintain freshness and was direct pressed. The free-run juice was used as a ‘ferment starter.’ It started in tank and moved to puncheons for a natural ferment. Block C was harvested later and pressed to tank after seven days on skins.

“It’s a much more delicate wine than previous years,” Pat told us, pleased with the development. The wine was exposed to oxygen early on to help the yeast along and create firm, resolute tannins. It finished in old puncheons with “only the most aromatic and slinky barrels kept for the Super Juice final blend,” Pat shared. Stellar! 

About the Winemaker
You won’t find a more dedicated, thoughtful and meticulous winemaker than Patrick Underwood.  Pat works with unique vineyards in Central Victoria; from dry-grown plots in Malmsbury, to obscure plantings of indigenous Venetian varieties in Colbinabbin, to iron-rich sites planted to mineral Nebbiolo.

His relationships with his growers are fiercely warm and tight, sharing ethics and values towards the land. In the cellar, Pat’s approach is one of passion, intuition and minimal intervention.
