Perfumed, volcanic and alive with energy

Despite being the lowest-altitude red in Stef Yim’s range, 760 Metri still comes from an impressive 720 to 770 metres above sea level. The wine blends fruit from the Taccione and Sciaranuova vineyards, where vines between 15 and 75 years old grow in pure volcanic rock and sand. Composed of 90% Nerello Mascalese and 10% Nerello Cappuccio, the vineyards are worked entirely by hand without irrigation or chemical treatments.

The varieties were hand-harvested and co-fermented with indigenous yeasts, then matured for 19 months in French oak vessels of various sizes and glass containers. The wine was bottled without fining, stabilisation or filtration, with only a small addition of sulphur.

Wild strawberry, cranberry and sour cherry rise from the glass, joined by warm herbs, smoke and crushed volcanic rock. The palate is lively and tactile, with juicy redcurrant, saline minerality and finely ground tannins carrying into a long, savoury finish. Perfumed yet firmly structured, this is an expressive and beautifully energetic Etna Rosso.

About the Wine

Paradoxically the lowest-altitude red in Stef’s range, the 760 Metri draws from two vineyards, Taccione and Sciaranuova, sitting between 720 and 770 metres above sea level. Ninety percent Nerello Mascalese and ten percent Cappuccio, from vines ranging 15 to 75 years old, planted in pure volcanic rock and sand. All vineyard work done by hand, no irrigation, no chemical treatments.

Hand-harvested and co-fermented with indigenous yeasts, then aged for 19 months across French oak barrels of different sizes and glass containers. No fining, stabilisation or additions, aside from a small amount of SO2 at bottling.

About the Winemaker
Stef Yim didn’t take the obvious route to Etna. A former Los Angeles sommelier, his search for great volcanic terroir led him through Lake County, Madiran and the Canary Islands before landing on Mount Etna in 2014. He founded Sciara the following year and now farms nine contrade across the volcano’s northern and southern slopes, including Contrada Cielo: hand planted in 2019 at 1,520 metres, believed to be Europe’s highest vineyard.

The estate takes its name from the scoriae, the volcanic scree found across Etna’s slopes, a detail carried through to the labels and the winemaking philosophy itself. Wines are built around altitude rather than any single site, grown on 100% volcanic soil, farmed by hand with no machinery or chemical inputs, and certified organic from the 2023 vintage. In the cellar there’s no fixed method, just instinct: whole bunches, maceration and vessel choice all shift with the season, nothing added beyond a touch of sulphur, no fining or filtration.
