About the Wine
This is excellent value Pinot Noir! Organically grown in the Macedon ranges and Micah has used 100% whole cluster fermentation followed by ageing in seasoned oak barrels for 12 months. This is a light-bodied wine, with gentle earthiness and minerality alongside red fruits and forest berries wrapped in silky tannins.
All wines unfiltered, unfined & wild fermented. 15PPM SO2.
About DEFIALY
Based in the Macedon Ranges, Micah Hewitt's background as a butcher and love for pairing good wholesome country-style food with honest wines provides abundant inspiration for his DEFIALY label. But most significantly, his spark ignites from his parents and the love they shared for each other as well as Micah and his sister Amber.
DEFIALY is an acronym for "Don't ever forget I'll always love you" which is Micah's way of carrying on his parents tradition of signing all cards with DEFIALY. How beautiful.
