High-altitude Chardonnay shaped by granite and patience

Dash Farms Chardonnay comes from vines planted in 1999 on the elevated western slopes of Leanganook, around 477 metres above sea level. Farmed by David Braybrook, the vineyard sits on granite-derived soils rich in quartz and fine feldspar sand.

The 2023 vintage brought another long, cool growing season, with Patrick harvesting on the earlier side to preserve freshness and balance. The fruit was foot-crushed, then slowly and gently pressed before settling overnight. A cool fermentation in tank allowed the wine to develop gradually, followed by partial malolactic fermentation and 12 months in barrel.

This thoughtful approach captures the character of the site with precision, balancing fruit, freshness and gentle barrel-derived texture. A refined, quietly expressive Chardonnay with the cool energy of its high-altitude origins.

About the Wine

The vines were planted in 1999 and grow high on the western slopes of Leanganook with a north-south orientation. The soils are Harcourt granite-derived colluvium (quartz and fine- to medium-grain feldspar sand). These rows sit at around 477 metres in elevation and are farmed by David Braybrook. 

The 2023 vintage was the last of a cool trio, but showed less disease pressure than in 2022. Overall, it meant the season was long, though Pat picked these grapes on the earlier side to enhance the balance between fruit and freshness. The fruit was foot-crushed before a slow and gentle press and overnight settling. It then went to tank for a cool ferment, "We enjoy the healthy and elongated fermentation arc we see in tank," Pat says. After ferment, the wines saw some malo and 12 months in barrel before racking and bottling in January 2025.

About the Winemaker
Little Reddie is the personal project of Patrick Underwood, based in Central Victoria, where he crafts wines with a focus on transparency, balance, and a light touch in both vineyard and cellar.

Known for his thoughtful, minimal intervention approach, Underwood creates wines that are expressive and approachable, while still grounded in structure and site. At the heart of Little Reddie is Nebbiolo, a variety traditionally associated with Northern Italy, but here reinterpreted through the lens of Central Victoria. Underwood works with the grape in a way that emphasises its natural perfume, fine tannin, and bright acidity, often resulting in wines that are lighter, more immediate, and highly drinkable, without losing the variety’s inherent structure.

Fruit is sourced from carefully managed vineyards across the region, with a focus on quality farming and sites that can deliver both ripeness and freshness. In the winery, intervention is kept to a minimum. Fermentations are typically wild, and the wines are handled gently to preserve their natural energy and texture.

Little Reddie wines often lean toward a more playful and accessible style, offering lifted aromatics, fine structure, and a sense of movement in the glass. They sit comfortably within the minimal intervention wine space, but always with a sense of control and intention behind them.Through Little Reddie, Patrick Underwood continues to explore how classic varieties like Nebbiolo can find new expression in Australia, producing wines that are distinctive, engaging, and reflective of both place and philosophy.

After years under his Little Reddie label—exploring Central Victorian vineyards and trialling countless iterations (including dozens of Nebbiolo ferments)—his eponymous releases under the Patrick Sullivan label arrive with real clarity and intent.Chardonnay is picked early and handled gently, with long ferments taken fully dry for texture and detail. Nebbiolo—sourced in collaboration with the Chalmers family—leans into perfume and finesse, while keeping the structure that makes the variety so compelling over time. The result is a set of wines defined by restraint, precision, and character.
