An glou glou style Jura light red from Domaine Bornard's biodynamic Pupillin vineyards.

This is the Bornard Trousseau made for joyful not-too-serious drinking, as opposed to the more thoughtful Garde-Corps. The name is derived from "guiguer”, which means to jump. From red marl vineyards in Pupillin it was harvested on 19 September and 100% de-stemmed. It spent 3 weeks being macerated with pumping over once a day and a light punching down.

Aged predominantly in tank (90%) unusually a small proportion was also aged in old barrels. It was bottled without filtration after 9 months. The ABV is quite high (14.1%)  but there is still noticeable acidity. It has no additions and, despite being the glou glou Trousseau, this vintage particularly, has potential to age. Certified organic.

Tony Bornard is one of the Jura's most exciting young winemakers, taking over his family's iconic domaine in Pupillin from his father Philippe in 2017. Farming 11 hectares across the renowned Arbois-Pupillin and Côtes du Jura appellations, Tony works with the region's classic varieties including Ploussard, Trousseau, Chardonnay, Savagnin and Pinot Noir.
