    "The first release since the 2019 vintage for High Paradise. This exciting and powerful 2023 expression consists of a mixture of early picked fruit, fully ripened fruit and some whole bunch maceration. 2023 High Paradise is a pure expression of Savagnin and Chardonnay from 30+ year old vines. Some Savagnin is crushed by foot along with Chardonnay and then direct pressed and fermented in a favourite old puncheon, whist the other half of the Savagnin ripens for a further week or two. This is then whole bunch macerated, bringing mineral depth, aroma and savouriness to this cuvee.

    Red clay over slate/siltstone with a predominance of iron stone quartz brings a bright and bountiful luminosity to its core. Drinking beautifully now, this wine is also at the very beginning of its elegance and we see that there is much longevity to this High Paradise." - Monique, Manon Farms

    Tim and Monique have spent the past decade transforming their slice of Peramangk land into a thriving regenerative ecosystem at Manon Farm. What began as a conventional vineyard has evolved into something far more profound under their stewardship—a living demonstration of what's possible when winemaking aligns with ecological principles. They've meticulously removed all artificial irrigation and fertigation systems, retrained 35-year-old vines to flourish on nature's rhythms alone, and created a biodiverse haven where native bees have returned, heritage orchards flourish, and kangaroos graze harmoniously across their rocky ridge. Their approach extends beyond the vineyard into carefully tended gardens for medicine and food, while their commitment to soil health has produced countless batches of energized compost and herbal fermentations that feed the earth beneath their feet.

    Every wine from Manon Farm carries the literal fingerprints of its makers—Tim and Monique handle each bottle from vine to cellar door with unwavering dedication to hand-crafted authenticity. They prune, tend, harvest, and stomp their grapes by foot before moving the wine by gravity alone, refusing to compromise their vision with industrial shortcuts. This intimate scale allows them to create wines that truly express each season's story, whether navigating the wettest years on record or adapting to unprecedented drought. While raising two nature-loving boys alongside their collection of chickens, ducks, dogs, and cats, they've proven that exceptional winemaking isn't just about technique—it's about creating a complete way of life that honours both the land and the wines it produces.
