    About the Wine

"From the northern end of the appellation, Champerrier, En Derée, En Croisotte. Intense purple in colour, all destemmed. 20% new wood. The aromatics are on the cusp of strawberry and raspberry. A bit more extraction but this has worked really well. In the mouth, the raspberry side dominates while the acidity and tannins provide structure. Drink from 2027-2032."

92 points, Jasper Morris, Inside Burgundy.

Grapes are destemmed and fermentation is with natural yeasts for a minimum of two weeks – possibly longer. The wines are aged for 18 months on fine lees worked in oak barrels (30% new barrels, 30% barrels from 1 wine, 30% barrels over 3 years old). 36-month drying barrels whose wood comes from Allier and Vosges oak.

"It has substance and structure, but without any harshness. It's a floral and luscious wine that can be aged for a few years to fully express its nobility."

    - Pascal, Winemaker

    Food Pairings

Hearty and robust dishes (roast lamb, rib of beef, duck breast), with a growing preference for game as the wine matures. Strong cow's milk cheeses.

About Domaine Pernot Pere & Fils

Taking over the family domaine in 2018, Pascal Pernot quickly gained respect and admiration as a top Gevrey-Chambertin producer. In an interesting backstory, Pascal’s great grandfather was chauffeur to the Liégard family of the Château de Brochon and subsequently inherited some vineyards (including the holding in La Croix Violette). The Domaine was established in 1900, with Pascal as the fourth generation, and surrounds the village of Brochon with a total of 7 ha.

With the domaine in the family name for a century, Pascal was destined to work the vines. First beginning his working life at Manuel Olivier in Concœur, where he learnt the trade and the skills to finesse wines worthy of the Burgundy appellations. With big plans in motion from the day he took over, he works towards having his whole range grown and bottled at the domaine, elevating the quality even further.

Located between the Premier Crus under the Côte Saint Jacques to the north and the Route des Grands Crus which marks one side of its perimeter to the south. The position of Pernot Pere et Fils is strategic, sitting on the middle of a hill, with minimum slope and about 300 meters elevation.

Pascal has worked hard to progress the vineyards to a sustainable viticulture while slowly implementing aspects of biodynamics. As the climate warms, he picks the grapes relatively early. For most of his range the grapes are destemmed and fermentation is with natural yeasts for a minimum of two weeks – possibly longer. The wines are aged for 18 months within barrels by the coopers; Billon and Rousseau.
