About the Wine

Chardonnay (55%) from Micah's organically grown estate Candlebark Hill vineyard and King Valley Savagnin (45%). Hand picked and co-fermented in seasoned oak barrrels for 15 months. This is Micah's ode to the classic Jura white blend.

The oak profile gentle comes through and enhances the wines depth. Green apples, orchard fruits and lemon pith combine with a lovely richness from the Savagnin.   

All wines unfiltered, unfined & wild fermented. 15PPM SO2.

About DEFIALY  

Based in the Macedon Ranges, Micah Hewitt's background as a butcher and love for pairing good wholesome country-style food with honest wines provides abundant inspiration for his DEFIALY label. But most significantly, his spark ignites from his parents and the love they shared for each other as well as Micah and his sister Amber.

DEFIALY is an acronym for "Don't ever forget I'll always love you" which is Micah's way of carrying on his parents tradition of signing all cards with DEFIALY. How beautiful.
