About Domaine Bitouzet-Prieur

Francois Bitouzet is a perfectionist, and both he and his team are constantly working to produce great wines and raise their standards year after year. As with all good producers, Francois is a strong believer that great wine comes from meticulous work in the vineyard. Care and attention is paid at every stage of winemaking. From the vine to the cellar, nothing is systematically managed at Domain Bitouzet-Prieur.

Yields are kept low and fruit is picked when it reaches optimal ripeness. An emphasis is placed on terroir, and highlighting the differences from one vineyard to another. The Domaine's old vines haven't been sprayed with chemicals for decades. Vincent Bitouzet stopped the use of chemicals in his vineyards in 1993. The same care is given to all of the fruit, whether it's intended for entry level Bourgogne Rouge / Blanc, or the 1er Cru Volnay and Meursault.

Winemaking is precise and thoughtful too, adapted depending on the needs of the vintage. Grapes are usually 100% destemmed and new oak is limited to 20-25%. A patient approach is taken in the cellar, with whites aged for up to 18 months before bottling, and reds up to 24 months. The wines strike a perfect balance between power and finesse which Volnay is famous for. Highly aromatic with lifted, concentrated fruit and structure suited for long ageing.
