Year after year, this one just keeps getting better! This is Micah's version of a Jura Savagnin (without the price tag!).

Slightly oxidative and aged under flor without topping up (Jura style), expect juicy stone fruits, creamy nuttiness, and beautiful acidity.  All wines unfiltered, unfined and wild fermented. 15PPM SO2.

About DEFIALY

Based in the Macedon Ranges, Micah Hewitt's background as a butcher and love for pairing good wholesome country-style food with honest wines provides abundant inspiration for his DEFIALY label. But most significantly, his spark ignites from his parents and the love they shared for each other as well as Micah and his sister Amber.

DEFIALY is an acronym for "Don't ever forget I'll always love you" which is Micah's way of carrying on his parents tradition of signing all cards with DEFIALY. How beautiful.
