    "A collective ferment of most of the white grapes we grow. First Sauvignon Blanc is picked and crushed by foot then pressed a handful of days later. Pinot Gris is then destemmed into this orange-y Sauvignon juice with Savagnin and Chardonnay skins joining the ferment. Together for about ten days, the grapes are then pressed off to old barrels and clay eggs. Wood to allow the fine tannin to develop, clay for the round lusciousness. The texture is velvety and succulent like a peach - delicious!" - Monique, Manon Farms

Their approach extends beyond the vineyard into carefully tended gardens for medicine and food, while their commitment to soil health has produced countless batches of energized compost and herbal fermentations that feed the earth beneath their feet.
