Our Pinot Noir is sourced entirely from our Napoleone Vineyard in Coldstream. A blend of mature MV6 clone blocks with minor contributions from 777 and 115, adding depth, complexity, and brightness. The fruit parcels are kept separate and undergo a wild fermentation process, where 90% of the fruit is fermented as whole berries in 4-tonne open fermenters and the remaining 10% is fermented as whole bunches in 1-tonne pots. The wine is gently pumped over twice a day and left on skins for about 20 days before being pressed and transferred to a combination of new (15%) and used French oak for maturation. The wine is not treated with sulphur during the malo-lees stage, allowing it to develop more depth and tannin harmony. Before bottling, the wine is filtered and a small amount of SO2 is added. Best to be consumed within 3-5 years.
