About The Wine
Delicate spice, vanilla, jasmine and roasted apricot jump out of the glass here. Edges of stone fruit appear throughout the palate, which is laced with ginger spice, mineral undertones and a chalky definition. The texture counterbalances the hint of fruit sweetness and the integrated acidity creates a wonderfully persistence finish. Balanced and drinking beautifully now.
In The Winery
All fruit is carefully hand harvested. This wine is made with 100% whole-bunch pressed fruit, from clusters affected by the early stages of Botrytis. A short, natural settle in tank preceded inoculation with neutral yeast, mostly in stainless steel at cool temperatures. A small percentage was fermented in old, French oak cigar barrels and remained on lees for a couple of months. Not fined. Bottled September 2022. Screwcap.
