About The Wine
A very classy pét nat having been aged for 42 months on lees before being carefully disgorged for optimal drinking pleasure. This is 'blanc de noir' 100% Pinot Noir with the white juice pressed off the dark skins within hours of picking.
Chasing a Champagne-like experience, the bubbles are fine and elegant, and the wine is dry. The extended ageing delivers layers of intrigue, creamy texture, complexity and those luxurious brioche notes we love in a celebratory glass of fizz.
About The Wine farm
We love The Wine Farm. Neil and Anna Hawkins craft exceptional cool-climate wines in Victoria's Gippsland region, with a particular focus on Chardonnay, Pinot Noir, and Riesling. This is an authentic soil-to-glass operation in every sense.
Their two small vineyards—just 3 and 5 hectares—are situated along the coveted red volcanic soil belt. Here, they farm biodynamically with as much attention paid to what's happening underground as to the winemaking above. Perhaps even more.
Soil health is paramount at The Wine Farm. If good wine demands quality grapes, then good vines need healthy, vital, living soil. No one understands this better than Neil Hawkins, and his wines are living proof.
