About The Wine
From Jeff Treager’s vineyard in Vine Vale, the Pedro Ximénez was picked and crushed straight in the vineyard during harvest. The crushed grapes and stalks were left with the juice for about four days until fermentation began, after which it was pressed into 600-litre French tonneaux for fermentation and ageing on lees for around 18 months. It was then racked and bottled.
A food-friendly, aromatic orange wine with a bitter campari element, cardamom spice and dried apple skin. A little skinsy, with the seductive aromas that only old vines of this fabulous Mediterranean-climate grape can deliver.
Enjoy with terrine, rich pasta, seafood or white meats.

One of the faces that would appear on the Australian natural wine Mount Rushmore, Tom Shobbrook has been instrumental in challenging the conventional winemaking norm and bringing natural wine to the front of a lot of wine drinkers consciousness.
After 12 years of growing organic grapes on his families vineyard in Seppeltsfield, Tom has moved to a farm in Flaxman Valley in which he has planted his own grapes and until his grapes are ready for production is sourcing grapes from old vines in Vine Vale.
