Clover Pinot Noir is sourced from a tiny 0.5 hectares of vines on an east-facing slope in the COB Clover Vineyard. The site is home to a patchwork of clones, including 777, 667, Martini and D5V12. The fruit is picked and sorted by hand. The majority is destemmed (10% bunches retained), chilled overnight and after three weeks of fermentation, the wine matures for 11 months in a single 1800-litre foudre
