2023 Commune of Buttons 'Ancestral' Blanc de Noir

About the Wine

This is 100% Pinot Noir from the Picadilly Valley vineyard. Jasper produced this wine to “push the limits of aged pet-nat.” It was gently pressed, and only 50% ofthe first pressings were used. The wine fermented naturally at cool temperatures. Once in bottle, aging was on lees for 30 months, resulting in a pleasant dough-like character and fine mousse. It’s a serious, aperitif-style designed to go with oysters and hors d’oeuvres.  

This wine is rewriting the pet-nat playbook and proving that this methodology can make serious, complex, and elegant wines.
