About The WIne

From vines Alice and Olivier have owned for many years in the commune of Chitry, about five kilometres from Courgis, where they live and work. This wine was aged in 228 litre barrels and demi-muids (600 litres). It was lightly-filtered.

Chitry is a white wine appellation that lies adjacent to the Chablis appellation and shares with it the wonderful limestone terroir. Those in the know snap up this wine as it has all the characteristics of a Chablis but at a lower price.

The vines from which the grapes were picked were grown in flinty limestone terroir which is the same as that which gives rise to the amazing wines created in the Chablis region next door.

It is a pure Chardonnay and is classified as a Burgundy Village wine (the village being Chitry). 

As always, the labels are created by the multi-talented Olivier.

Every grape is meticulously hand-selected, fermented with wild yeasts, and aged in precious old foudre and oak barrels to create wines of stunning purity and complexity, with Olivier's own artistic labels completing these masterpieces that represent the pinnacle of natural winemaking.
