About The Wine
Wine that makes you close your eyes when you sip!
The wine has a great mix of cherry and darker fruit on the nose but the underlying character of the Pinot noir is one of tension, minerals, acidity and fine tannins that bring length to the mid palate.
Winemaking
100% Demeter Biodynamic certified home grown fruit from The Wine Farm. Carefully picked by hand into small crates to avoid damaged from juicing.
All tye fruit was destemmed, so no whole bunches or stems where used in the fermentation. Wild yeast fermented dry on skins then pressed off skins and sent to 228L oak barrels of which 20% was new. There the wine aged for 12 months before being racked to bottling tank and 30ppm sulphur was added. Rested for 2 years in bottle prior to release.
About The Wine farm
We love The Wine Farm. Neil and Anna Hawkins craft exceptional cool-climate wines in Victoria's Gippsland region, with a particular focus on Chardonnay, Pinot Noir, and Riesling. This is an authentic soil-to-glass operation in every sense.
Their two small vineyards—just 3 and 5 hectares—are situated along the coveted red volcanic soil belt. Here, they farm biodynamically with as much attention paid to what's happening underground as to the winemaking above. Perhaps even more.
Soil health is paramount at The Wine Farm. If good wine demands quality grapes, then good vines need healthy, vital, living soil. No one understands this better than Neil Hawkins, and his wines are living proof.
