About The WIne
One of two of the de Moors’ vineyards in premier cru climats, Mont de Milieu is on the right bank of the River Serein.
The soil is Kimmeridgian marl and limestone with Portlandian limestone scree. With a southerly exposure it is one of the warmest Chablis climats.
This vintage was vinified 2/3 in a clay amphora and 1/3 in barrels for 12 months. It was then blended and aged for a further year in a 2500 litre barrel. It was bottled in November 2024. This vintage was lightly filtered.
The wine has a richness and generous expansiveness about it. Unsurprisingly it will be even more interesting if it can enjoy more aging.
As always, the labels are created by the multi-talented Olivier.
About Alice and Oliver de Moor
Alice and Olivier de Moor craft extraordinary, cult-status natural wines from coveted small plots in Chablis, Chitry, and the rare Saint-Bris appellation that are highly sought-after in Paris and New York, with justy tiny amounts making it to Australia.
These legendary vignerons have spent over thirty years mastering their craft near the village of Courgis, where brutal cold and ancient Kimmeridgean limestone soils produce minuscule yields of exceptional fruit.
Every grape is meticulously hand-selected, fermented with wild yeasts, and aged in precious old foudre and oak barrels to create wines of stunning purity and complexity, with Olivier's own artistic labels completing these masterpieces that represent the pinnacle of natural winemaking.
