Description
Pat uses a patchwork of Nebbiolo clones from the Chalmers and Willoughby Bridge vineyards for this wine. There are too many to list here, but for the clone-spotters out there, they include CVT 230 and MAT 1,3,5,6,7,8,9 and 10. They are picked and fermented separately using various methods and vessels. A portion of the Nebbiolo was vinified as rosé, while the balance was treated like a red and fermented in a combination of concrete, stainless steel and barrel. The Refosco spent 24 days on skins in concrete. The individual wines were then blended and bottled.
