A pure and fruit driven Chardonnay from Micah's organically farmed Candlebark Hill vineyard. Aged for 12 months on full solids in terracotta amphora.
All wines unfiltered, unfined & wild fermented. 15PPM SO2.
About DEFIALY
Based in the Macedon Ranges, Micah Hewitt's background as a butcher and love for pairing good wholesome country-style food with honest wines provides abundant inspiration for his DEFIALY label. But most significantly, his spark ignites from his parents and the love they shared for each other as well as Micah and his sister Amber.
DEFIALY is an acronym for "Don't ever forget I'll always love you" which is Micah's way of carrying on his parents tradition of signing all cards with DEFIALY. How beautiful.
