About The Wine
Chenin Blanc from the Blewitt Springs district of McLaren Vale.
Aromas of white peach, red apple and flint show on the aroma with cinnamon adding complexity.
The palate is a textural delight with a great depth of flavour – time on ferment lees has provided an attractive creamy character to the wine. Use of French oak provides a touch of astringency on the finish. A rounded and complete wine, crisp acidity cleans the finish and provides great length.
The fruit was separated in to two different ferments – one in tank, the other in neutral French oak barriques. The oak portion was fermented using wild yeasts and kept on ferment lees with minimal sulphur with weekly battonage for nine months. The two portions were blended just prior to bottling in December 2023.

"From 50-year-old vines in the Brini vineyard, Blewitt Springs; part tank and part fermented and raised in a new Austrian puncheon and older French barriques. Well, this is a treat, vibrantly fresh but also intensely flavourful and profoundly textural. It’s almost in your face, but it’s a welcome intrusion. Cooked Bramley and fresh Cripps apple, nashi, cool white peach, cinnamon, ground ginger, clove. The sweep of texture is commanding, but so is the quietly vigorous acidity and seam of phenolic tension. Lovely."
