A wine I’ve wanted to make for several years now - I love Fiano & Greco as individual varietals but I also thought they'd make tremendous partners blended in the right ratio. Super bright and fresh, aromatic and textural with candied citrus peel and a gentle spiciness from the inclusion of stems. Summer in a bottle...

Heathcote Fiano (80%) destemmed & macerated on top of whole bunch Heathcote Greco (20%), co-fermented for 4 days. Pressed to stainless to complete fermentation then into neutral oak 9 months. 1 month in stainless before bottling.

All wines unfiltered, unfined & wild fermented.

About Defialy

Micah Hewitt's inspiration for DEFIALY can be placed in a few places understandably a great appreciation for quality produce and land. But most significantly would be his parents and their love the shared for each other as well as Micah and his sister Amber. DEFIALY is an acronym for "Don't ever forget I'll always love you" which is Micah's way of carrying on his parents tradition of signing all cards with DEFIALY.

Orders placed after 3pm will be delivered the next applicable day.

Our same day delivery is eligible every day of the week except Wednesdays.

Important Delivery Information:

Same day deliveries must be received in person and cannot be left unattended.
Delivery drivers will refuse delivery to an intoxicated person.
ID check may be required to confirm recipient is aged 18 or over.
Standard deliveries (not same day) are marked ‘Authority to Leave’ so our driver can leave the parcel in a safe place for you.
We will always do our best to find a safe place, however if the driver deems it unsafe to leave, your order will be returned to await further instructions from you, or in the case of Australia Post deliveries, the parcel will be taken to the nearest collection facility.
Delivery charges are non-refundable. A $15 charge may apply for redelivery.
