About The Wine
This little number is a 50/50 split between Sauvignon Blanc and Pinot Gris. The fruit comes from the Pooks Hill Vineyard in Totness where 30-year-old vines grow on volcanic sand over petrified schist. Anton has been involved in the farming here for 10-plus years, and has farmed it exclusively for the last two, always using organic practices.
The fruit was whole bunch pressed and fermented in 2000-litre oak barrels before racking and maturation with decent ullage to bring a broad and smooth oxidative character.

Anton approaches winemaking exactly as you'd hope: the antithesis to mass production. His philosophy encompasses every stage of the process - from organic farming and meticulous land stewardship to hand-harvesting fruit, wild yeast fermentation, and zero additives. His commitment to purity extends even to distilling his own alcohol for winery cleaning, eliminating any need for harsh chemicals throughout the entire operation.
