Winemaker Valérie Frison cultivates 6 hectares of vines at Ville sur Arve in the Côte des Bars region in southern Champagne. Her vineyards are 93 per cent pinot noir and 7 per cent chardonnay and have been certified organic since 2003. Valérie takes great care to ensure that the grapes are picked at optimum ripeness. The wines are barrel fermented on lees. A natural primary ferment occurs, followed by spontaneous malolactic fermentation. Valérie believes that natural vinification allows her Champagne Brut Nature to truly express its terroir.
100% Pinot Noir that has fermented in old Chablis barrels. The aroma is light and spicy, showing apple skin and cherries. A beautiful palate of minerality and red fruit. Razor sharp acidity and a touch of autolysis.
