2021 Animale Amber Gris
This year's blend is 62% Cahilton vineyard, Lower Yarra Valley (a limestone-rich west-facing slope in the Gruyere subregion) and Napoleone (slightly north facing slope of light brown, duplex clay loams in the Coldstream subregion). No fining or filtration.
2021 Brave New Wine 'Pystopia'
It’s a blend of Gewürztraminer, Pinot Gris and Riesling, which has had a bit of skin-contact and a bit of co-fermentation, followed by six months on lees. It’s a riot of florals with a touch of tropical fruit.
2021 Dormilona House 'Orenji'
Organic Semillon and Sauvignon Blanc, hand-harvested then fermented on skins for two weeks in open fermenters, and a giant cement egg for eight weeks. After this, it was pressed off to barrel and egg for full malo. Simply racked, with a touch of sulphur before bottling.
