Based in the village of Nothalten, Alsace, at the foot of the Vosges mountains. Soils here are extremely complex and rainfall is the lowest in France with a very long growing season helping the grapes develop elegant and complex aromas. When Patrick took over the family Domaine several years ago, he was one of the first in the area to begin slowly converting his parcels to purely organic treatments. He uses only wild, indigenous yeasts for the fermentation process with minimal manipulation in the winery and the wines are always bottled unfined.
Patrick searches for the minerality of the soil to be expressed through his wines and prefers elegance and minerality to power in his bottlings. This wine is a prime example from 80% Sylvaner and 20% Pinot Blanc. Edgy acidity and a slight nutty oxidative touch combine with an oily texture and fantastic palate length, serious wine with lots of energy. This wine would be great with cheese, something creamy or something nutty.
