Fermentation was carried out over 25 days with gentle handling to preserve fruit purity and fine structure. \u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cspan\u003eAfter pressing, the wine was transferred to French oak barriques - 30% new - where it matured for ten months.
