These complex soils bring distinctive mineral structure and depth to the wine.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp class=\"isSelectedEnd\"\u003e\u003cspan\u003eThe fruit was hand-sorted and destemmed, then cold-soaked before a slow wild fermentation with one gentle pump-over each day. After ten days, it was pressed to stainless steel to finish fermentation and rested undisturbed for nine months. Bottled by hand with only 10 ppm sulphur added, just 590 bottles were produced.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp class=\"isSelectedEnd\"\u003e\u003cspan\u003eBrambly and beautifully structured, the 2025 has wonderful energy, mineral complexity and exceptional balance.
