The Sangiovese grows in red clay over sandstone on an east-facing slope at the bottom of a cold, deep valley, while the Nebbiolo is rooted in deep red clay.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp class=\"isSelectedEnd\"\u003e\u003cspan\u003eThe organically farmed grapes were hand-harvested and destemmed, then fermented for two weeks in wooden vats and clay pots before basket pressing. The Sangiovese matured in oak while the Nebbiolo rested in glass demijohns, with the two components assembled before bottling with zero additions.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cspan\u003eRipe strawberries meet terracotta, red clay, celery seed, leather and rosehip. Earthy, savoury and beautifully distinctive, this is a compelling Australian expression of two historic Italian varieties.
