Wild fermentation took place in a selection of large and small Burgundian oak barrels (30% new), with temperatures reaching up to 25°C to build texture and yeast-derived complexity. The wine was then matured on lees for a further 10 months to enhance palate weight and subtle savoury detail.\u003c\/div\u003e\n\u003cdiv class=\"column\"\u003e\u003cbr\u003e\u003c\/div\u003e\n\u003cdiv class=\"column\"\u003eSourced from one of the most coastal vineyards in the Wilyabrup subregion, the wine displays aromas of sea spray, chipped shell and crushed chalk, supported by lemon zest, white florals and tart grapefruit. The palate is intensely saline and exceptionally long, with mouth-watering stone fruit and citrus flavours.
