The vineyard’s northerly aspect helps the fruit ripen slowly in Henty’s cool climate, building flavour and complexity while preserving freshness.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp class=\"isSelectedEnd\"\u003e\u003cspan\u003eThe fruit was hand-harvested and naturally fermented with indigenous yeasts in open vats, with regular hand plunging and no additions. After around 15 months, largely in seasoned French oak, the wine was bottled unfiltered by gravity.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp class=\"isSelectedEnd\"\u003e\u003cspan\u003eDark cherry, florals and dried herbs rise from the glass, joined by subtle earth and cool mint. The palate is silky and quietly powerful, combining generous fruit with fine, silty tannins and precise structure.
