Hand-harvested from 10 to 30-year-old vines rooted in basalt, gravel and loam, the fruit undergoes a slow four-week fermentation in the region’s naturally cool conditions, with a portion retained as whole bunches. The wine is then matured for 18 months in seasoned French oak.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp class=\"isSelectedEnd\"\u003e\u003cspan\u003eDark berries, liquorice and crushed violets meet black pepper, graphite and savoury charcuterie notes. The palate is medium-bodied, silky and finely structured, balancing depth and ripeness with cool-climate freshness, elegant tannins and impressive length.
