After fermentation the wine is aged on the lees under fleurette for 1 year in 100-year-old foudres (5000 litres).\u003c\/p\u003e\n\u003ch5\u003e\n\u003cbr\u003e\u003cbr\u003eAbout Clos Cibonne\u003cbr\u003e\u003cbr\u003e\n\u003c\/h5\u003e\n\u003cp\u003eClos Cibonne is one of 18 Cru Classé growers in the Côtes de Provence AOP, and is in fact the most southerly.\u003c\/p\u003e\n\u003cp\u003eThe estate’s 15 hectares of vineyards are located a mere 800 metres from the coast and are surrounded by hillsides in the base of a bowl that faces the sea. This topography creates air circulation extends the growing period whilst cooling the vines.\u003c\/p\u003e\n\u003cp\u003eThe soil is a mixture of schist \u0026amp;amp; clay. After harvest, the wines are fermented in stainless steel \u0026amp; some are then aged under fleurette (a thin veil of yeast) in 100-year-old, 500L foudres.\u003c\/p\u003e\n\u003cp\u003eThe estate is managed organically, although is not certified.
