Malolactic fermentation was prevented to preserve freshness, with the wine resting on lees for 11 months before bottling.\u003c\/p\u003e\n\u003cp\u003eWhite peach, ripe lime and green apple lead into crushed shells and a subtle pressed-linen character. The palate is pure and finely focused, with bright acidity and layers of crushed nuts and almond meal adding texture and complexity. Precise, beautifully composed and capable of ageing gracefully.
