A blend of 4 vineyards, 1 in Red Hill, 1 in Red Hill South and 2 vineyards in Shoreham. Pressed straight to a combination of old puncheon and 1000L stainless steel eggs.
Juice oxidised and fermented on gross lees. 100% MLF. No fining. Filtered and bottled in June 2023 with minimal SO2. I like MP Gris to be textural, so lots of lees work, but not oily so picked in leaner flavours, always super happy when I end up something like the 2023 in the pear flavour spectrum. – Will Byron, Onannon
