Spicy and energetic, this organic Shiraz can be thrown in the fridge for a shill or laid out on the table at room temperature. It's fun and crisp, with some cheeky notes of cherries and my mum's berry jelly.
A self-confessed 'lazy-bones' winemaker (Dormilona is Spanish for ‘lazy bones’), Jo Perry is low-intervention in the winery, instead focusing her energies on the quality of fruit that she brings in the winery.
The fruit was harvested in the cool morning, then wild-fermented in open bins before it was basket-pressed to tank before sugar completion. It went through natural malo, before it was racked, blended and bottled. No additions, fining nor filtration and only minimal sulphur.
