An experimental wine - I couldn't bare to throw out the freshly pressed Gamay skins from the wine that became "Visions Of Noir" which was the last fruit to come in for v21 so they went into an amphora of Vermentino which was a wine made from the first fruit of v21. Hey presto - Head and Tails!
21 day semi-carbonically fermented Vermentino, 25% whole bunch, pressed to amphora. The pressed Gamay skins then steeped in the Vermentino, effectively infusing the wine.
Watermelon pink, delicately perfumed with white florals and citrus peel. Light as a feather, fine boned and gentle grip that lingers on the palate.
750ml 11.2% alc.
