Chardonnay 49%, Pinot Gris 34%, Gewurztraminer 17%
All the fruit was picked on the same day, de-stemmed and saw a few hours on skins before being pressed to tank (no pressings cut). It was settled overnight before racking off gross solids, then co-fermented (100% wild of course).The wine was bottled at the end of its single fermentation with absolutely no additions, and left to work its magic in glass. The wine is not disgorged.
