Andy and Tina from Analog Wines do things the old way in Harcourt, just outside of Castlemaine in central Victoria. 25-year-old shiraz grown beside massive granite boulders is hand-harvested, 100% carbonic ferment, and aged in stainless.
This wine has the style of a vin de table - as easy to enjoy with cheese and charcuterie as it is with a long slow braise and herb salad.
No oak and no additions except minimal sulfur at bottling.
Aroma: fresh crunchy plums, a hint of savoury herbs, new leather (or new car), maraschino cherry.
Palate: tomato paste, lifted acid, chewy leather tannins, and relaxed, unctuous mouthfeel. Soft and easy.
Chill to 8-10 degrees for maximum enjoyment.
