When winemakers in Tuscany started using non-Italian grape varieties in the 1970's the term "Super Tuscan" was born. When Jono and Damon Koerner do it in SA - we call it a Super Clare. (Thanks Mr West Bar Footscray for the great wordplay).
A gorgeous red blend unlike anything else in Australia. 93% Cabernet Sauvignon, 5% Sangiovese and 2% Sciacarello. All the fruit is sourced from 20+ year-old vines grown on black red clay on limestone.
Naturally fermented in open fermenters, gently worked and left on skins for 3 weeks and pressed to French oak for 10 months.
Dark and brooding berries and soft leather, with a little bit of sassy red fruits balancing the chewy tannins. Perfect with charcuterie and crumbly cheddar.
