Organically farmed from a variety of clones and vineyards of 16-37 years around 5-600 metres elevation. Soils are a mix of sandstone, quartz and schist. The fruit is 100% whole cluster pressed and settled in tank overnight. Racked to a mix of French and Austrian barriques, puncheons & foudres for nine months, 15% new.
Chiseled with moreish salivation, super clean on the palate with a smoky reductive mineral note that softens to a creamy frame with time open. Develops over a day or more, if you can make it last that long.
