Harcourt Valley Cabernet Sauvignon off the former Bress vineyard, together with Heatchote Nero D’Avola grown by Chalmers. Both parcels fermented as whole berries, without any pump overs or plunging to retain primary fruit and allow tannin to build gently. Pressed to barrel and aged for 4 months prior to racking, blending and bottling.
This years red is fresher, more youthful offering, with vibrant fruit flavour, bright acid and ripe yet gentle tannin that looks equally at home in an esky as it does next to a plate of spaghetti. This is very much an any day of the week red....primary enough to be hoovered, but just enough tannin and fruit weight to warm alonely heart. Will be very welcome in parks and back yards this summer.
