A blend of Pinot Gris, Chardonnay and Pinot Noir, organically farmed from Carey Gully. Handpicked separately then co-fermented. Gris was de stemmed and macerated for two weeks then pressed. Chardonnay was then whole bunch direct pressed on top, pinot was destemmed and macerated for a further week. It was then racked from stainless tank to an old 600L french demi-muid and aged on fine lees for 6 months.
