The 2019 Bianco is an entirely different creature than 2018.
This is roughly 45% Fiano, 45% Vermentino and 10% Malvasia
They were all fermented separately in stainless steel using various fermentation techniques and all had a little less skin contact than in previous years. They all had at least 18 months of elevage on full solids and were racked only once to assemble the final blend before bottling.
The resulting wine is very poised, structured and energetic. It seems light, laser-focused and fresh whilst having a good amount of elegant structure with super vibrant acidity.
The fruit from the 2019 harvest was some of the best I’ve seen come out of the Heathcote vineyard and it really is reflected in this wine.
With Zero adds and zero s02 this is a super clean and fresh wine!
