Production: 70% Shiraz which was fermented separately with lots of whole berries, basket pressed after 7 days while still fermenting and transferred to stainless. The other varieties (Sagrantino, Schioppettino, Pinot Noir, Pinot Meunier) were co-fermented together at roughly the same time as the Shiraz, whole berries and about 10% whole bunch. These were left to ferment and pressed after roughly 10 days. The two wines were then blended together while finishing ferment. Bottled after 2 rackings and ageing in tank for roughly 4 months. Unfined and unfiltered with a touch of sulphur added at bottling.
Tasting notes: Bright primary red berry fruits with sarsaparilla on the nose. The palate is soft and plump with a touch of grip and a nice savoury edge. The ultimate spring party wine and great chilled out of the fridge.
