This is a Gamay rosé pét-nat. The vines are 20-40 years old, grown on clay and limestone. These grapes are actually purchased from Raph’s brother in law. Direct press, then ferment begins in tank. Bottled and left on the lees for just over 4 months and then disgorged. Zero SO2. ~10gm/L residual sugar. Very fresh, very fun!
